This is the time for mangoes and what better way to use them than as a side-kick to whatever meats you’ve got going on. This is a great recipe that you can prepare in advance. Goes great as a hot dog topping too – just make sure you chop the mango finely so the big chunks don’t roll off your dog. If you find that the mangoes are too sweet, add some vinegar to give it the tartness it needs. If they are not sweet enough, adjust with sugar.
Ingredients:
- Ripe mangoes
- Red onion
- Red and orange bell peppers
- Jalapeno pepper
- Cayenne pepper
- Lemon juice
- Fresh cilantro
- Salt
Directions:
Chop very fine cubes. Blend in the mixing bowl. Refrigerate. TIP: Do not transfer until the last moment. Sprinkle with fresh cilantro.
